Tsukiji Sushi is a one-off Japanese boutique restaurant within The Westbury Hotel, Mayfair, named after the famous Tsukiji fish market in Tokyo. Following a recommendation from Chisou, Bedrock was asked to transform a clothes store into a stylish and intimate 20-seat restaurant. As space was limited, we moved the entrance to one corner and replaced the street frontage with a combination of clear and frosted glass to increase natural light. Glowing red woods and a simple colour palette of black and off-white create a minimal aesthetic. We raised the floor level of the dining area to incorporate an illuminated Zen garden beneath glass panels. Banquettes maximise seating and electronic fretwork shutters can be lowered from the ceiling to create a more private dining experience.
